Why You’ll Love This Recipe
Since sourdough bread is a staple in our house, I always have active starter and discard on hand.
There are many recipes you can make using your discard. This is why I always save any starter let over and store it in the fridge. Don’t throw it out!
This recipe, in particular, quickly became one of our favorite discard recipes. Here are a couple reasons why:
- Zero waste: Perfect for using up inactive sourdough discard.
- Quick & easy: No waiting for dough to rise—just mix, pour, and bake.
- Delicious flavor: Infused with garlic and herbs for a bold, Italian-inspired taste.
- Easily Customizable: The thickness of discard that you pour in will determine the thickness of your crust. Whether you like thin crust or deep dish style, you can easy control how it comes out.
My husband likes white alfredo style sauce with banana peppers and onions. Whereas, our daughter likes a classic pepperoni pizza. As for me, I love peppers and black olives, but can also go for a good, freshly shredded, cheese pizza recipe.

Ingredients
- 1 ½ cups inactive sourdough discard
- 1 tbsp garlic powder
- 1 tbsp Italian seasoning
- 1 tbsp oregano
- 1 tsp salt
- Pizza Sauce
- Fresh Shredded Cheese
- Toppings of your choice
For this recipe, I have found my cast iron skillet to cook the crust more thoroughly than a traditional skillet.

Instructions
Step 1: Preheat & Prep the Pan
- Preheat your oven to 425°F.
- Place a cast iron skillet inside while the oven heats up.
Step 2: Mix the Dough
- In a bowl, whisk together the sourdough discard, garlic powder, Italian seasoning, oregano, and salt until smooth.

Step 3: Bake the Crust
- Carefully remove the hot cast iron skillet from the oven and coat it with oil.
- Pour in the sourdough discard mixture, spreading it evenly.
- Bake for 10 minutes, until the edges start to crisp.

Step 4: Add Sauce & Toppings
- Spread your favorite pizza sauce over the crust.
- Add shredded mozzarella (I highly recommend shredding your own for the best melt!) and your choice of toppings.

Step 5: Bake Again
- Return to the oven and bake for 8-10 minutes, until the cheese is melted and bubbly.
- Enjoy!

Sourdough Discard Pizza Recipe

Easy Sourdough Discard Pizza
Ingredients
- 1.5 cups Sourdough Discard Bring the discard out of the fridge about an hour before baking with it. You don't want to use cold discard on a hot cast iron pan. If you want a deep crust, you can increase the amount of starter in this recipe. Do not use active starter.
- 1 tbsp Garlic Powder
- 1 tbsp Italian Seasoning
- 1 tbsp Oregano
- 1 tsp salt
- 1 tbsp olive oil
- Pizza Sauce
- 1 block Mozzarella Cheese I highly recommend shredding your own cheese. It makes such a difference in the taste.
- Toppings of your choice
Instructions
- Put your cast iron skillet in the oven and preheat to 425.
- While the pan and oven are preheating, it's time to prep the dough. In a small bowl, mix 1.4 cups of sourdough discard with salt, oregano, garlic powder, and Italian seasoning.
- When the oven is preheated, remove the pan and add oil to lightly coat bottom.
- Pour discard into pan for your crust. If you like thin crust, don't use all of the mix.
- Bake just the crust for 10 minutes.
- Add sauce and toppings of your choice.
- Bake again for 8-10 minutes.
- Enjoy!
