You probably won’t believe the simplest ingredients could result in such delicious treat. After tasting your first batch, I promise, you’ll have found your new favorite healthy breakfast option!

No flour! No sugar! Sweet bananas, peanut butter, chocolate chips – need I say more?

The sweet bananas mixed with the savory peanut butter protein is sure to leave your mouth watering for more. And, as a bonus…you will love that you do not have to use sugar or flour in this recipe.

Before you get started on your peanut butter banana muffins recipe, you’ll want to make sure you have ripe bananas. Sometimes, this means you’ll need to plan ahead, because the banana’s often found in the grocery store are not ripe enough.

After purchasing your bananas, leave them sitting on the counter for a few days until they become speckled with brown spots. The riper the banana the better.

Did you know, through the process of ripening, the starches in a banana are converted to sugar? This is where you will achieve the sweet flavoring when baking. There are a lot of muffin recipes that use ripe bananas as a natural sweetener.

A banana can never be too ripe for baking unless it has reached the state of mold. If your bananas appear to have mold on them, throw them out right away.

Ingredients for Flourless Banana Peanut Butter Muffins

Peanut Butter

For this recipe, I prefer to use a creamy peanut butter. However, you can use a natural peanut butter of your liking.

Some people may prefer crunchy peanut butter over a smooth peanut butter. While another peanut butter lover may want to try almond butter, cashew butter, or seed butter.

Whatever you like – try it! Just know the different butters will result in a different taste.

Eggs

(use egg substitute for vegan banana muffins)

Ripe bananas

As mentioned above, you will want ripe bananas for this recipe. The more ripe they are the sweeter the banana flavor will be. Underripe bananas are too firm for mashing and will leave lumps in the batter.

Honey

When baking, I prefer to use local honey.

The bees in your area collect and bring pollen back to the hive. This pollen is sourced from local plants and flowers. “Since many seasonal allergies are caused by these same plants, eating honey that contains that pollen can possibly combat those allergies.” (TomsofMaine.com)

I suggest visiting your local farmer’s market or a whole foods in your area. Chances are, they will have a plethora of local honey to sell. While there, stock your pantry with other healthy ingredients.

Vanilla extract

There are many kinds of vanilla extract. I do know not all vanilla extracts are created equally, but I haven’t sampled all of them to tell you what’s the best option.

While some people choose to make their own vanilla extract, I prefer to bake with basic baking vanilla. Maybe one day I will learn how to make my own, and I’ll share the recipe with y’all.

Baking soda

Use whatever baking soda you have available. I try to stick to the Bob’s Red Mill brand, but will use whatever is on sale.

Chocolate chips

What would a peanut butter banana muffin recipe be without chocolate chips; right?

Choose from dark, milk, or white chocolate chips. Whichever you like best is what you should throw into the mix. Or completely skip this ingredient if you don’t want them.

The only thing I do suggest is to use the mini chocolate chips. I have learned the mini chocolate chip morsels fold in much easier than the traditional size. (Especially if you’re using a small bowl)

Flourless Peanut Butter Banana Muffins Recipe

Grab a large mixing bowl (or set of multiple size bowls), muffin tins, muffin liners, the ingredients, and let’s get started on these easy muffins.

If you don’t want to use disposable muffin liners, you can use silicone cupcake liners or simply spray the muffin pan with cooking spray.

When I made the Instagram Reel, (for times sake) I mixed everything into one large bowl using my kitchen aid mixer.

That method worked great, but mashing your bananas first in a separate bowl is always a good idea. This will assure the batter is as smooth as possible. The steps below are broken down to assure you get the best batter possible for that creamy peanut butter flavor throughout the center of the muffin.

  1. Preheat oven to 400 degrees.
  2. In a medium bowl, mash your bananas.
  3. In a large bowl, mix together the peanut butter, eggs, mashed bananas, honey, vanilla extract, and baking soda.
  4. Once mixed well, fold in your chocolate chips.
  5. Use an ice cream scoop or large spoon to fill your muffin liners 3/4 of the way with batter.
  6. Bake for 13-15 minutes.

Although you will have a moist muffin, you can add a creamy peanut butter topping for the extra wow factor. Simply melt some regular peanut butter, or peanut butter chips, and drizzle some on top of each muffin.

Ingredients
  

  • 1 cup Organic Peanut Butter
  • 2 eggs
  • 2 Ripe bananas
  • 1/4 cup Honey
  • 1 tbsp Vanilla Extract
  • 1/2 tsp Baking Soda
  • 3/4 cup dark chocolate chips

Instructions
 

  • Preheat oven to 400 degrees
  • Mix peanut butter, eggs, bananas, honey, vanilla, and baking soda in a large mixer.
  • Stir in chocolate chips
  • Spray or line muffin tray
  • Fill the muffin slots with batter (approx 3/4 of the way full)
  • Bake for 13-15 minutes
  • Let cool then serve
